High Carbon Steel
High carbon steel requires diligent care to maintain its edge and integrity. Always clean and dry thoroughly after use to prevent patina from turning into rust. Apply a food-safe mineral oil or specialized blade wax regularly, especially before long-term storage. Developing a natural silver or grey patina is normal and provides a layer of protection, but red rust should be removed immediately with a fine abrasive and re-oiled.
Wood Care
To care for wooden handles, keep them clean, dry and lightly oiled. Wipe off dirt and moisture with a soft cloth, then apply a thin coat of beeswax or linseed oil along the grain. Let it soak in for a few minutes and buff away any extra. Repeat this from time to time, especially if the wood looks dry.
